
| Hanna Part No: HI-3897-agri Acidity, defined as oleic acid pecentage, is a parameter that indicates olive oil freshness. If a high acidity value is present it indicates that the oil is becoming rancid and thus decreasing in quality.
Olive Oil is sold in different 'grades' or 'qualities'. To be sold as extra virgin olive oil, the acidity content must be below 1% according to the CEE regulation number 2568/91. Under this regulation, acidity is expressed in percentage of oleic acid and is used to discriminate between an extra virgin olive oil and a lesser quality olive oil. A low acidity value indicated an extraction process made soon after the olive harveesting and also is a guarantee that natural non-chemical methods of extraction have been used.
